Instructions
1. Prepare the Potatoes

Peel and cut the potatoes into small cubes for faster cooking.

Rinse and pat dry to remove excess starch (helps them crisp better).
2. Cook the Bacon

Heat a large pan over medium heat.

Add chopped bacon and cook until crispy.

Remove bacon and set aside, leaving the bacon fat in the pan for flavor.
3. Cook the Potatoes

Add diced potatoes to the same pan with the bacon fat.

Cook over medium heat, stirring occasionally, for 10–15 minutes until golden and crispy.

Add onion halfway through cooking if using.

4. Combine
