Baked Honey Ham & Mozzarella Eggrolls
Description
Golden, crispy eggroll wrappers filled with sweet honey ham and gooey melted mozzarella, then baked instead of fried for a lighter, less greasy crunch.
They come out beautifully crisp on the outside while the inside stays melty, savory, and slightly sweet. Perfect as an appetizer, snack, or even a quick lunch with a salad on the side.
Ingredients

10–12 eggroll wrappers

1½ cups chopped honey ham

1½ cups shredded mozzarella cheese

2 tablespoons Dijon mustard (optional, for extra flavor)

1 tablespoon honey (optional for added sweetness)

1 egg (for sealing)

Olive oil spray or 2 tablespoons melted butter
Instructions
1️⃣ Prep
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
2️⃣ Make the Filling
In a bowl, mix:

Mozzarella

Dijon mustard (if using)

Honey (if using)
3️⃣ Roll Them Up

Lay an eggroll wrapper in a diamond shape.

Place 2–3 tablespoons of filling in the center.

Fold bottom corner over filling.

Fold in sides tightly.

Roll upward and seal edge with beaten egg.
Place seam-side down on baking sheet.
4️⃣ Bake
Lightly brush or spray with olive oil (this helps them crisp up).
Bake for 12–15 minutes, flipping halfway, until golden and crispy.
