1 packet (1 oz) Low-Carb Taco Seasoning (or homemade mix)

1 can (10 oz) Diced Tomatoes with Green Chilies (like Rotel)

4 cups Beef Broth

4 oz Cream Cheese, softened and cubed

1 cup Heavy Whipping Cream

1.5 cups Sharp Cheddar Cheese, shredded

Brown the Meat: In a large pot or Dutch oven over medium-high heat, brown the ground beef with the diced onion and garlic until the meat is fully cooked. Drain any excess grease.

Season & Simmer: Stir in the taco seasoning, diced tomatoes (with their juices), and beef broth. Bring the mixture to a boil, then reduce heat to low and let it simmer for about 10 minutes to let the flavors marry.
