Step-by-Step Instructions

Sauté the Aromatics: In a large stockpot or Dutch oven, heat a splash of olive oil (or a bit of broth if you are cooking oil-free) over medium heat. Add the onions, celery, and carrots. Sauté for 6–8 minutes until they begin to soften.

Add Garlic and Spices: Stir in the minced garlic, tomato paste, and Italian seasoning. Cook for about 1 minute until highly fragrant.

Build the Soup: Add the chopped cabbage, bell peppers, diced tomatoes (with juices), and the broth. Stir well to combine. Drop in the bay leaf.

Simmer: Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for 20–25 minutes, or until the cabbage and carrots are perfectly fork-tender.
