Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat together the sugars, oil, eggs, and vanilla until smooth.
- Gradually mix the wet ingredients into the dry ingredients.
- Fold in the grated carrots, walnuts, and crushed pineapple if using.
- Divide the batter evenly between the prepared pans.
