Here is a fantastic recipe for a creamy, crunchy chicken salad. If you want to keep the carbs low, you can easily swap the grapes for lower-glycemic berries (like blackberries) or chopped pecans, but here is the classic template shown in your photo:

Classic Crunchy Chicken Salad

Ingredients

For the Salad:

  • Shredded chicken: 3 cups (rotisserie chicken works perfectly)

  • Red grapes: 1 cup, halved (or swap for blackberries/pecans to keep it low-carb)

  • Celery: 2 stalks, finely chopped

  • Toasted cashews or almonds: ½ cup (optional, for extra crunch)

  • Green onions: 2 tablespoons, thinly sliced

For the Creamy Dressing:

  • Mayonnaise: ½ cup

  • Sour cream or Greek yogurt: ¼ cup

  • Lemon juice: 1 tbsp (freshly squeezed)

  • Dijon mustard: 1 tsp

  • Salt and black pepper: To taste

  • Fresh dill or tarragon: 1 tbsp, finely chopped (optional, but highly recommended)

Instructions

1. Prep the Ingredients

In a large mixing bowl, combine your shredded chicken, halved grapes (or low-carb berry alternative), chopped celery, sliced green onions, and toasted nuts.

2. Whisk the Dressing

In a separate small bowl, whisk together the mayonnaise, sour cream (or yogurt), lemon juice, Dijon mustard, salt, pepper, and fresh herbs until smooth and creamy.

3. Toss and Combine

Pour the dressing over the chicken mixture. Use a large spoon or spatula to gently fold everything together until all the ingredients are evenly coated.

4. Chill and Serve

Cover the bowl and refrigerate for at least 30 minutes before serving. This gives the flavors time to meld together and chills the salad perfectly.

Tip: Serve this scooped into large lettuce wraps, over a bed of mixed greens, or straight out of the bowl with a fork!
