Crispy Garlic-Parmesan Cauliflower Bites

Ingredients

For the Cauliflower

  • 1 large head Cauliflower, cut into bite-sized florets

  • 2–3 tbsp Avocado oil or extra virgin olive oil

  • ½ cup Grated parmesan cheese (the kind in a shaker or finely powdered works best for sticking)

  • Seasonings: 1 tsp garlic powder, 1 tsp onion powder, ½ tsp smoked paprika (for that beautiful golden-red color), ½ tsp salt, and ¼ tsp black pepper

  • Garnish: Finely chopped fresh parsley

For the Zesty Dipping Sauce

  • ⅓ cup Full-fat mayonnaise (ensure sugar-free)

  • 1 tbsp Sriracha or your favorite hot sauce

  • ½ tsp Garlic powder

  • 1 tsp Lemon juice or pickle juice (for a little tang)

Instructions

1. Roast the Cauliflower

  1. Preheat & Prep: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup and to prevent the cheese from sticking.

  2. Wash & Dry: Make sure your cauliflower florets are completely dry after washing. If they are wet, they will steam instead of getting crispy.

  3. Coat with Oil & Spices: In a large mixing bowl, toss the cauliflower florets with the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until every piece is evenly coated.

  4. Add the Crunch: Sprinkle the grated parmesan cheese over the seasoned cauliflower. Toss vigorously so the cheese sticks to the oiled surfaces of the florets.

  5. Spread & Bake: Arrange the cauliflower in a single layer on the prepared baking sheet, leaving some space between the pieces. Bake for 20 to 25 minutes, flipping halfway through, until the edges are deeply golden, charred, and crispy.

2. Mix the Sauce

  1. While the cauliflower is baking, whisk together the mayonnaise, hot sauce, garlic powder, and lemon juice in a small bowl until perfectly smooth.

  2. Transfer to a small ramekin and garnish with a tiny pinch of parsley.

3. Assemble

  1. Pile the hot, crispy cauliflower bites onto a serving tray around the dipping sauce.

  2. Scatter a handful of fresh chopped parsley over the top and serve immediately while perfectly crisp!

💡 Air Fryer Option

If you want them even crunchier in less time, pop the coated cauliflower pieces into an air fryer basket at 400°F (200°C) for 12 to 15 minutes, shaking the basket every 4 minutes until they are perfectly browned and crisp.
