Ingredients
- 2 lbs Chicken breast or thighs, cut into 1-inch bite-sized cubes
- 2 tbsp Olive oil (or avocado oil)
- 2 tbsp Dried oregano
- 1 tbsp Garlic powder
- 1 tsp Onion powder
- 1 Large lemon (juiced and zested)
- Salt and black pepper to taste
- 2 tbsp Butter (for that perfect pan-sear finish)
Instructions
- Marinate the Chicken: In a medium bowl, toss the chicken cubes with olive oil, dried oregano, garlic powder, onion powder, lemon zest, salt, and pepper. Let it sit for 5 to 10 minutes to absorb the flavors.
- Heat the Pan: Heat a large skillet over medium-high heat. Add a splash of oil or a teaspoon of butter to coat the pan.
- Sear the Bites: Add the chicken cubes in a single layer (work in batches if your pan isn't large enough—overcrowding will steam the chicken instead of searing it). Cook undisturbed for 3 to 4 minutes to get a beautiful golden crust.
