For the Salad

3 cups Cooked chicken breast, shredded or diced (rotisserie chicken works great)

1 can (15 oz) Black beans, rinsed and drained

1 cup Sweet corn (canned drained, frozen thawed, or fresh)

1 cup Roma tomatoes or red bell pepper, finely diced

⅓ cup Red onion, finely chopped

⅓ cup Fresh cilantro, finely chopped

1 Jalapeño, seeded and finely diced (optional, for heat)
For the Creamy Fiesta Dressing

½ cup Mayonnaise

½ cup Sour cream or plain Greek yogurt

2 tbsp Fresh lime juice

1 tsp Chili powder

1 tsp Cumin

½ tsp Garlic powder

½ tsp Onion powder

Salt and black pepper to taste

Make the Dressing: In a small bowl, whisk together the mayonnaise, sour cream (or Greek yogurt), lime juice, chili powder, cumin, garlic powder, onion powder, salt, and pepper until smooth and creamy.

Combine Ingredients: In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes (or bell pepper), red onion, cilantro, and jalapeño.
