This is a classic, ultra-soft Pillowy Pull-Apart White Bread (often made using a milk-bread style technique to give it that incredible, cloud-like bounce you see in the photos).
To achieve that exact super-squishy, stretchy texture while keeping it completely low-carb and keto-friendly, we use a yeast-activated dough based on vital wheat gluten and oat fiber. The yeast feeds on a tiny bit of honey or inulin, leaving you with a real, rising bread that bounces right back when you press it.

Ingredients
The Yeast Activation:

1 cup Warm water (around 105°F - 110°F)

The Dry Ingredients:

1 1/4 cups Vital wheat gluten (This provides the structure and elasticity needed for that pull-apart texture)

The Wet Ingredients:

Instructions
1. Activate the Yeast
In a small bowl, dissolve the honey/inulin in the warm water. Sprinkle the yeast on top. Let it sit for 7–10 minutes until it becomes thick, frothy, and foamy.
2. Mix the Dough
In a large bowl (or a stand mixer fitted with a dough hook), whisk together the vital wheat gluten, oat fiber, almond flour, sweetener, baking powder, xanthan gum, and salt.
3. Knead Until Elastic
Pour the foamy yeast mixture, beaten eggs, and apple cider vinegar into the dry ingredients. Mix until a dough starts to form, then add the softened butter. Knead the dough thoroughly for 8–10 minutes (highly recommended to use a stand mixer, as gluten dough is very sticky). The dough should become smooth, highly elastic, and stretchy.
4. Shape the Pull-Apart Loaf
Divide the dough into 4 equal portions. Roll each portion into a smooth ball. Place the 4 balls in a single row inside a greased 8.5 x 4.5-inch loaf pan.
5. The Rise
Cover the loaf pan with a warm, damp cloth or plastic wrap. Place it in a warm, draft-free spot to rise for about 60 minutes, or until the dough has doubled in size and crowns over the top of the pan.
6. Bake to Golden Perfection
Preheat your oven to 350°F (180°C). Gently brush the top of the risen dough with a little melted butter or egg wash for a glossy shine. Bake for 23–25 minutes until the crust is beautifully deep golden brown and sounds hollow when tapped. (If the top browns too quickly, tent it loosely with aluminum foil at the 15-minute mark).
7. Cool and Serve
Remove from the oven and let it sit in the pan for 5 minutes before transferring it to a wire rack. Let it cool slightly before slicing or pulling it apart to enjoy that perfect, cloud-like bounce!
