Slow Cooker Melt-In-Your-Month Cabbage Soup

This recipe turns simple green cabbage and sweet onions into a deeply rich, comforting dish. Slow cooking it allows the natural sweetness of the cabbage to caramelize into the savory broth.

Ingredients

  • 1 medium head green cabbage, chopped into bite-sized pieces

  • 1 large yellow onion, sliced into half-moons

  • 4 cloves garlic, minced

  • 4 cups rich beef broth or bone broth (for that deep golden color)

  • 2 tbsp butter or olive oil

  • 1 tbsp Worcestershire sauce (or coconut aminos for a strict keto swap)

  • 1 tsp dried thyme or Italian seasoning

  • Salt and fresh black pepper to taste

  • Optional kick: A pinch of red pepper flakes

 Instructions

  1. Layer the Base: Toss the chopped cabbage, sliced onions, and minced garlic directly into your slow cooker.

  2. Season: Add the butter (cut into small pats), dried thyme, Worcestershire sauce, salt, pepper, and optional red pepper flakes over the top.

  3. Pour the Broth: Pour the beef broth over everything. It might look like a lot of cabbage at first, but it will shrink down significantly as it cooks!

  4. Slow Cook: Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the cabbage and onions are completely translucent, tender, and silky.

  5. Adjust & Serve: Give it a good stir, taste the broth, and adjust the salt and pepper to your liking before ladling it into bowls.
