This recipe turns simple green cabbage and sweet onions into a deeply rich, comforting dish. Slow cooking it allows the natural sweetness of the cabbage to caramelize into the savory broth.
Prep time: 10 minutes | Cook time: 4–6 hours | 🍽️ Servings: 6
Ingredients
-
1 medium head green cabbage, chopped into bite-sized pieces
-
1 large yellow onion, sliced into half-moons
-
4 cloves garlic, minced
-
4 cups rich beef broth or bone broth (for that deep golden color)
-
2 tbsp butter or olive oil
-
1 tbsp Worcestershire sauce (or coconut aminos for a strict keto swap)
-
1 tsp dried thyme or Italian seasoning
-
Salt and fresh black pepper to taste
-
Optional kick: A pinch of red pepper flakes
Instructions
-
Layer the Base: Toss the chopped cabbage, sliced onions, and minced garlic directly into your slow cooker.
-
Season: Add the butter (cut into small pats), dried thyme, Worcestershire sauce, salt, pepper, and optional red pepper flakes over the top.
-
Pour the Broth: Pour the beef broth over everything. It might look like a lot of cabbage at first, but it will shrink down significantly as it cooks!
-
Slow Cook: Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the cabbage and onions are completely translucent, tender, and silky.
-
Adjust & Serve: Give it a good stir, taste the broth, and adjust the salt and pepper to your liking before ladling it into bowls.
