Because almond flour can sometimes make a dough too heavy to pipe into clean swirls, this recipe uses a rich cream cheese and butter base that holds its shape beautifully through a piping bag.

½ cup (1 stick) Unsalted butter, softened perfectly to room temperature

2 oz Full-fat cream cheese, softened to room temperature

½ cup Powdered Erythritol or Confectioners Allulose (do not use granulated, or the cookies will feel gritty)

1 large Egg white (helps give the cookies that signature crisp edge)

2 tsp Vanilla extract

1/4 tsp Salt

2.5 to 3 cups Super-fine blanched almond flour (add slowly until the dough is thick but pliable enough to pipe)
Equipment needed: A sturdy piping bag fitted with a large open star tip (like a Wilton 1M).

Preheat & Prepare: Preheat your oven to 350°F (175°C). Line a large cookie sheet with parchment paper or a silicone baking mat.

Cream the Fats & Sweetener: In a large bowl, use a hand mixer to beat the softened butter, softened cream cheese, and powdered sweetener together on high for 2–3 minutes until the mixture is light, fluffy, and completely smooth.

Add the Wet Ingredients: Lower the mixer speed and beat in the egg white, vanilla extract, and salt until fully incorporated.

Mix in the Flour: Gradually add the super-fine almond flour, about a half-cup at a time. The dough should be cohesive, thick, and smooth—not crumbly.

Pipe the Swirls: Spoon the dough into your piping bag. Holding the bag vertically over the baking sheet, press down and pipe into a tight spiral or rosette shape (just like the top image), lifting up quickly at the center. Leave about 1 inch of space between each cookie.

Bake: Bake for 12 to 15 minutes, keeping a close eye on them. You want the edges and the ridges of the swirls to just turn a light golden brown (as shown in the bottom image).

Cool Completely: Crucial step! When they first come out of the oven, they will be very soft. Let them sit on the hot baking sheet for 10 minutes, then transfer the parchment paper to a cooling rack. They will firm up into perfectly crisp, buttery shortbread as they cool down.
