Ingredients
- 2 cups Red Cabbage, roughly chopped (provides the intense purple color and antioxidants with virtually zero impact when strained)
- 2 tbsp Dried Hibiscus Flowers (adds a tart, fruity flavor and deepens the color)
- ¼ cup Fresh Blueberries (optional for steeping flavor—adds minimal trace carbs when strained, but can be omitted for strict zero-carb)
- ½ cup Fresh Lemon Juice (turns the drink from deep blue-purple to a vibrant magenta!)
- ½ to ⅔ cup Powdered Allulose or Erythritol (adjust to taste to replace the honey shown in 1000031987.jpg)
- 4 cups Water
- Fresh Mint & Lemon Slices for serving
👩🍳 Instructions
- Boil and Steep: In a medium pot, combine the chopped red cabbage, dried hibiscus flowers, blueberries (if using), and 4 cups of water. Bring to a boil, then reduce the heat and let it simmer for about 10–15 minutes until the cabbage loses its color and the liquid turns a deep, dark purple.
- Strain: Place a fine-mesh strainer over a large bowl (as shown in the bottom-left of 1000031987.jpg) and pour the liquid through to separate the juice from the cabbage and fruit pulp. Discard the solids.
- Sweeten & Transform: While the liquid is still warm, stir in your zero-carb sweetener until fully dissolved. Next, pour in the fresh lemon juice—watch the magic happen as the acidity shifts the pH, changing the color from a dull blue-purple to a gorgeous, bright magenta!
- Chill and Serve: Let the syrup cool completely, then transfer it to glass bottles for storage in the fridge. To serve, pour over a tall glass filled with ice, dilute with a bit of cold water or sparkling water if desired, and garnish with fresh lemon slices and mint leaves.
