 Description

Amazing No-Bake Chocolate Eclair Cake is a creamy, layered dessert inspired by classic French eclairs — but without baking. It features layers of graham crackers (or biscuits), smooth vanilla pudding filling, and rich chocolate frosting on top. The layers soften in the fridge to create a cake-like texture that is creamy, sweet, and completely irresistible. It’s perfect for parties, family gatherings, or when you want an easy dessert with big flavor.


 Ingredients

 Filling

  • 2 boxes (about 100g each) instant vanilla pudding mix

  • 3 cups cold milk

  • 1 container (about 240ml / 8 oz) whipped topping, thawed

 Layers

  • 2–3 sleeves graham crackers (or similar plain biscuits)

 Chocolate Topping

  • 200g semi-sweet chocolate

  • ½ cup heavy cream
    OR

  • 1 can chocolate frosting (store-bought for easier preparation)


 Instructions

1. Prepare the Filling

  • In a large bowl, whisk together vanilla pudding mix and cold milk.

  • Let it sit for 2–3 minutes until thickened.

  • Gently fold in the whipped topping until smooth and creamy.


2. Assemble the Cake

  • In a baking dish (9×13 inch works well), arrange a layer of graham crackers at the bottom.

  • Spread half of the pudding mixture evenly over the crackers.

  • Add another layer of crackers on top.

  • Spread the remaining pudding mixture evenly.

  • Add one final layer of crackers on top.


3. Add the Chocolate Topping

  • Melt chocolate with heavy cream over low heat or in short microwave intervals, stirring until smooth.

  • Pour the chocolate over the top layer and spread evenly.


4. Chill
