Baked Blueberry Cottage Cheese Breakfast Bowl
Prep Time: 5 mins | Bake Time: 20-25 mins | Yield: 1 serving | Protein: ~17g
Ingredients
- 1 cup cottage cheese
- 1 large egg
- 1 tbsp sugar-free maple syrup or liquid monk fruit (or regular honey/maple syrup)
- ¼ tsp vanilla extract
- ¼ cup fresh or frozen blueberries
- 1 tbsp rolled oats (optional, for texture)
- Pinch of ground cinnamon
Instructions
- Prep: Preheat your oven to 350°F (175°C) and lightly grease an oven-safe ramekin or small baking dish.
- Blend or Whisk: For a smooth, cheesecake-like texture, blend the cottage cheese, egg, liquid sweetener, and vanilla extract in a high-speed blender or food processor until completely silky. (Alternatively, simply whisk them well in a bowl for a textured result).
- Assemble: Pour the mixture into your ramekin. Fold in half of the blueberries and the optional rolled oats, then top with the remaining blueberries and a sprinkle of cinnamon.
- Bake: Bake for 20 to 25 minutes until the edges are golden, the center is set, and the top puffs up slightly.
- Serve: Let it cool for 5 minutes before diving in. Serve warm!
