Blueberry Cream Cheese Loaf

1. Prepare the Pan

  • Preheat oven to 175°C (350°F).

  • Grease and line a 9×5-inch loaf pan with parchment paper.


2. Make the Batter

  • In a bowl, whisk flour, baking powder, baking soda, and salt.

  • In a separate bowl, beat butter and sugar until light and fluffy.

  • Add eggs one at a time, mixing well.

  • Stir in vanilla.

  • Alternate adding dry ingredients and milk, mixing just until combined.

  • Toss blueberries with 1 tablespoon flour and gently fold into the batter.


3. Prepare Cream Cheese Mixture

  • Beat cream cheese and sugar until smooth.

  • Add egg and vanilla; mix until creamy.


4. Assemble

  • Pour half of the loaf batter into the prepared pan.

  • Spread the cream cheese mixture evenly over the batter.

  • Add remaining batter on top.

  • Use a knife to gently swirl for a marbled effect (optional).


5. Bake

  • Bake for 50–65 minutes, or until a toothpick inserted in the center comes out clean.

  • If the top browns too quickly, cover loosely with foil.


6. Cool & Serve

  • Let cool in the pan for 10–15 minutes, then transfer to a wire rack.

  • Slice once fully cooled.


Serving Ideas:

  • Dust with powdered sugar

  • Drizzle with lemon glaze

  • Serve with coffee or tea
