Instructions
- Activate the Yeast: In a small bowl, combine warm water, inulin/honey, and yeast. Let it sit for 7–10 minutes until it becomes thick and foamy.
- Mix Dry Ingredients: Whisk together the vital wheat gluten, oat fiber, sweetener, baking powder, and salt in a large bowl.
- Form the Dough: Pour the foamy yeast mixture, eggs, and melted butter into the dry ingredients. Mix until a dough forms, then knead for 8–10 minutes (by hand or with a stand mixer hook) until the dough is smooth and elastic.
- The "Bowl" Setup: Divide the dough into 4 equal portions. Shape them into smooth balls. Grease 4 small, oven-safe glass bowls or ramekins. Place one dough ball into each.
- The First Rise: Cover the bowls with a warm, damp cloth and let them rise in a warm spot for about 60 minutes, or until they dome perfectly over the rims (just like the top image!). Sprinkle with poppy seeds.
- Bake: Preheat your oven to 350°F (175°C). Place the glass bowls directly on a baking sheet. Bake for 20–25 minutes until the tops are deeply golden.
- The Glow Up: Immediately upon removing them from the oven, brush the tops with a beaten egg wash or melted butter for that signature shiny lacquer finish. Let cool slightly, then carefully pop them out of the bowls to cool completely on a wire rack.
