  • 1/2 tsp Lemon Extract (for an extra flavor punch)
  • Coating: 2–3 tbsp additional powdered sweetener

  1. Mix the Base: In a medium bowl, beat the softened cream cheese, butter, and powdered sweetener together until completely smooth and fluffy.
  2. Flavor: Stir in the lemon juice, lemon zest, and lemon extract until well incorporated.
  3. Chill: Place the bowl in the refrigerator for 1 to 2 hours (or the freezer for 30 minutes) until the mixture is firm enough to handle.
  4. Roll: Use a small cookie scoop or spoon to portion out small balls. Roll them quickly between your hands, then drop them into a small bowl of powdered sweetener to coat.
  5. Store: Keep stored in an airtight container in the fridge or freezer.
