Slow Cooker Chicken Stew

1. Prepare the Ingredients

  • Chop all vegetables into bite-sized pieces.

  • Season the chicken lightly with salt and pepper.

2. Add to Slow Cooker

  • Place chicken at the bottom of the slow cooker.

  • Add potatoes, carrots, celery, onion, and garlic.

  • Stir in broth, thyme, parsley, paprika, and tomato paste.

3. Cook

  • Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken is tender and vegetables are soft.

4. Shred & Thicken (Optional)

  • Remove chicken, shred with two forks, and return to the stew.

  • For a thicker stew, stir in cornstarch mixture and cook for an additional 15–20 minutes.


 Serve

Serve hot with crusty bread, biscuits, or over rice. Garnish with fresh parsley if desired.
