1. Prepare the Ingredients

Chop all vegetables into bite-sized pieces.

Season the chicken lightly with salt and pepper.
2. Add to Slow Cooker

Place chicken at the bottom of the slow cooker.

Add potatoes, carrots, celery, onion, and garlic.

Stir in broth, thyme, parsley, paprika, and tomato paste.
3. Cook

Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken is tender and vegetables are soft.
4. Shred & Thicken (Optional)

Remove chicken, shred with two forks, and return to the stew.

For a thicker stew, stir in cornstarch mixture and cook for an additional 15–20 minutes.
Serve
Serve hot with crusty bread, biscuits, or over rice. Garnish with fresh parsley if desired.
