Smoky Jalapeño Popper Meatloaf

Ingredients

The Meatloaf Base

  • 2 lbs Ground beef (80/20 mix works best for juiciness)

  • 1/2 cup Crushed pork rinds (or almond flour) as a low-carb binder

  • 2 large Eggs

  • 2 tbsp Worcestershire sauce

  • 1 tbsp Smoked paprika

  • 1 tbsp Garlic powder

  • 1 tsp Onion powder

  • 1 tsp Salt and 1/2 tsp Black pepper

The Jalapeño Popper Filling & Topping

  • 8 oz Cream cheese, softened

  • 1.5 cups Sharp cheddar cheese, shredded (divided)

  • 4-5 Jalapeños (2 diced for the filling, 2-3 sliced into rounds for the top)

  • 6 slices Bacon, cooked crisp and chopped (divided)

The Creamy Ranch Drizzle

  • 1/4 cup Sour cream or heavy cream

  • 2 tbsp Mayonnaise

  • 1 tsp Hidden Valley Ranch seasoning powder (or DIY dill, chives, garlic, onion powder mix)

  • Splash of water to thin it out for drizzling

Instructions

1. Prep the Oven & Pan

Preheat your oven to 375°F (190°C). Line a 9x5-inch loaf pan with parchment paper, leaving some overhang for easy removal later.

2. Make the Filling

In a medium bowl, mix the softened cream cheese, 1 cup of the shredded cheddar, the diced jalapeños, and half of the chopped bacon. Stir until fully combined.

3. Build the Meatloaf

  1. In a large bowl, combine the ground beef, crushed pork rinds, eggs, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix gently with your hands just until combined (overmixing makes meatloaf dense).

  2. Press about half of the meat mixture into the bottom and slightly up the sides of the prepared loaf pan, creating a well in the center.

  3. Spoon the cream cheese mixture into that well.

  4. Top with the remaining meat mixture, pinching the edges to completely seal the cheese filling inside.

4. Bake and Top

  1. Bake for 45 minutes.

  2. Carefully remove the meatloaf from the oven. Carefully drain off any excess grease if necessary.

  3. Top the meatloaf with the remaining 1/2 cup of cheddar cheese, the remaining bacon pieces, and the fresh jalapeño slices.

  4. Return to the oven for another 10-15 minutes, or until the cheese is melted and bubbling, and the internal temperature of the meat reaches 160°F (71°C).

5. The Grand Finale

While the meatloaf rests for 10 minutes, whisk together the sour cream, mayo, ranch seasoning, and a splash of water until smooth and pourable.

Lift the meatloaf out of the pan using the parchment paper, place it on a serving platter, and generously zig-zag the ranch drizzle across the top right before slicing. Garnishing with a bit of fresh parsley or cilantro adds that perfect final touch. Enjoy!
