Ingredients
1 large Egg (~6g protein, 0g carbs)
1/4 cup (approx. 25–30g) Unflavored Protein Powder (Beef Isolate, Whey Isolate, or Egg White Protein Powder work best for baking) (~24–26g protein, 0g carbs)
1 tbsp Butter or Ghee, melted (plus a little extra for greasing the mug and topping)
1/2 tsp Baking Powder (optional, for fluffiness)
A pinch of Salt and Black Pepper (or seasonings of choice)
Instructions
Prep the Mug: Grease the inside of a microwave-safe mug or small round ramekin with a little bit of butter to prevent sticking.
Mix the Ingredients: In a small bowl or directly in the mug, whisk the egg and melted butter together. Stir in the unflavored protein powder, baking powder, and a pinch of salt until you have a smooth, thick batter.
Microwave: Cook on high for 60 to 90 seconds. Keep an eye on it—it will puff up significantly over the rim of the mug as it cooks.
Slice and Serve: Let it cool for one minute. Slide a knife around the edges to pop it out, slice it into rounds, and top it with a pat of butter and extra cracked black pepper.
Pro Tip: If you want a more authentic "bread" texture, pop the sliced rounds into a toaster or sear them in a hot skillet with a little butter for a minute on each side until golden brown!
