Blueberry Greek Yogurt Bites
Prep time: 10 minutes | Freeze time: 2 hours | Yields: Varies based on mold size
Ingredients:
- 1/2 cup Greek yogurt
- 1/2 cup fresh blueberries
- 1 tablespoon honey
Equipment Needed:
- A silicone sphere mold (to get the exact round shape in the photo) or a standard mini muffin tin / silicone ice cube tray.
- A toothpick or skewer for swirling.
Step-by-Step Instructions
- Prepare the Blueberry Component: To get those stunning, vibrant purple swirls shown in you want to turn the blueberries into a thick sauce or puree. Place the fresh blueberries in a small bowl and microwave them for about 30–45 seconds until they burst and release their juices, then mash them thoroughly with a fork. Alternatively, you can pulse them in a mini blender. Let it cool for a minute.
- Sweeten the Yogurt: In a separate bowl, stir together the Greek yogurt and the tablespoon of honey until completely smooth.
- Layer and Swirl: Spoon a little bit of the sweetened Greek yogurt into the bottoms of your silicone molds. Add a small spoonful of the mashed blueberry puree right on top, followed by another small dollop of yogurt.
- Create the Marble Effect: Take a toothpick or the tip of a knife and gently drag it through the layers in a swirling motion to create that gorgeous marbled pattern.
- Freeze: Pop the mold into the freezer for at least 2 hours, or until the bites are completely solid.
