Ingredients

For the Pork:

  • 1 (3–4 lb / 1.5–2 kg) pork loin roast
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced

For the Apple Cider Glaze:

  • 1 cup apple cider (or unsweetened apple juice)
  • Β½ cup dried cranberries
  • 2 tbsp Dijon mustard
  • ΒΌ cup honey
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp fresh rosemary (or Β½ tsp dried)
  • 1 apple, peeled and diced
  • 2 tbsp butter (optional, for a richer glaze)

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Season the pork loin generously with salt, pepper, and minced garlic.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown, about 2–3 minutes per side.
  4. In a small saucepan, combine the apple cider, Dijon mustard, honey, brown sugar, apple cider vinegar, rosemary, dried cranberries, and diced apple. Simmer for 5–7 minutes until slightly thickened.
  5. Place the pork in a roasting pan and brush with half of the glaze.
  6. Roast for 60–75 minutes, or until the internal temperature reaches 145Β°F (63Β°C). Baste with the remaining glaze every 15–20 minutes.
  7. Remove the pork from the oven and let it rest for 10 minutes before slicing.
  8. If desired, stir the butter into the remaining glaze and spoon it over the sliced pork before serving.

Serve with mashed potatoes, roasted vegetables, green beans, or wild rice for a delicious and elegant meal.
