π Cranberry Dijon Pork Loin Roast with Apple Cider Glaze π
Ingredients
For the Pork:
- 1 (3β4 lb / 1.5β2 kg) pork loin roast
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 3 cloves garlic, minced
For the Apple Cider Glaze:
- 1 cup apple cider (or unsweetened apple juice)
- Β½ cup dried cranberries
- 2 tbsp Dijon mustard
- ΒΌ cup honey
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp fresh rosemary (or Β½ tsp dried)
- 1 apple, peeled and diced
- 2 tbsp butter (optional, for a richer glaze)
Instructions
- Preheat your oven to 375Β°F (190Β°C).
- Season the pork loin generously with salt, pepper, and minced garlic.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown, about 2β3 minutes per side.
- In a small saucepan, combine the apple cider, Dijon mustard, honey, brown sugar, apple cider vinegar, rosemary, dried cranberries, and diced apple. Simmer for 5β7 minutes until slightly thickened.
- Place the pork in a roasting pan and brush with half of the glaze.
- Roast for 60β75 minutes, or until the internal temperature reaches 145Β°F (63Β°C). Baste with the remaining glaze every 15β20 minutes.
- Remove the pork from the oven and let it rest for 10 minutes before slicing.
- If desired, stir the butter into the remaining glaze and spoon it over the sliced pork before serving.
