Salt-Preserved Parsley

Ingredients

  • Fresh Parsley: 4 parts (finely chopped, flat-leaf or curly)

  • Coarse Sea Salt or Kosher Salt: 1 part (do not use iodized table salt)

The Golden Ratio: Maintain a 4:1 ratio by volume (e.g., 4 cups of finely chopped parsley to 1 cup of salt) or roughly a 4:3 ratio by weight if you prefer precision. You can also mix in other soft herbs like dill or cilantro!

 

​Step-by-Step Instructions

​1. Wash and Bone-Dry the Herbs

​Thoroughly wash your parsley to remove any dirt or grit. Crucial Step: The parsley must be completely dry before proceeding, as residual surface water can cause the mixture to spoil. Use a salad spinner and then spread the sprigs across a clean kitchen towel to air-dry fully.

​2. Chop Finely

​Strip the leaves and tender stems away from the thick woody bases. Finely chop the parsley using a sharp chef's knife. Avoid using a food processor if possible, as it can over-process the leaves into an unwanted mushy paste.

​3. Combine with Salt

​In a large glass or ceramic mixing bowl, combine your finely chopped parsley and the salt. Using clean hands or a spoon, toss and massage the mixture thoroughly until the salt is completely distributed and the herbs begin to wilt slightly.

​4. Pack the Jars

​Transfer the mixture into clean, dry glass mason jars—just like the ones shown in 1000032762.jpg. Pack the mixture down firmly with the back of a spoon to eliminate any air pockets. Leave about a half-inch of headspace at the top, and seal the lids tightly.

​5. Storage

​Store the jars directly in your refrigerator. Over the first week, the volume will reduce by about half as the salt draws out the herb's natural juices.

  • Adjust Your Cooking Salt: Because this is a salt-cured preserve, it is highly seasoned. When adding a spoonful to a recipe, omit or heavily reduce any additional salt called for in the dish until you’ve tasted it.
